Zesty Buckwheat Salad Recipe 

An excellent alternative to rice, buckwheat is claimed to be one of the world’s healthiest foods- both nutritious and energising. The grain is nutrient rich containing high levels of all nine essential amino acids, iron, antioxidants, minerals, vitamins and rutin. Diets containing buckwheat come with numerous health benefits and  have been linked to lowered risk of developing high cholesterol and high blood pressure. Additionally buckwheat aids in prevention of gallstones, better blood sugar control, and protection against breast cancer with a health-promoting potential higher than that of vegetables and fruits.

Buckwheat – 2 cups (cooked0

Apples – 1 no.

Celery – 3 stalks

Oranges – 2 nos.

Herbs of your choice

Raisins – 1/2 cup



Begin by placing cooked buckwheat in a large mixing bowl. Then add diced apple and stalks of celery chopped in to cubes. Cut  oranges into halves, and, using a fork, press juice out over buckwheat. Continue to zest both the oranges to add a tangy taste to the salad. Follow this by adding herbs of your choice, raisins and a sprinkle of salt.

After allowing the salad to rest for 15-20 minutes, mix everything thoroughly together and serve cold. The flavoursome salad will cause your tastebuds to explode and you should experience a variety of different flavours in each bite.

A nutrient dense salad is excellent for lunch or light dinner to accompany your meals. The fruity flavours activate the gastric juice in the stomach which help in greater digestion and absorption of nutrients.
